Recipe - Seafood Creamy Tomato Soup

Of course this is keto-friendly! For non keto friends, just treat this as low carbs meal, your body will feel great from having it.


Seafood Creamy Tomato Soup Recipe

(For 1 pax serving)





Ingredients

Part 1:

50g Prawn (removed shell)

80g Scallop (small size)

Marinade:

1 tsp Ginger powder

1/2 tsp Sweet paprika

1/2 tsp Black pepper

1/4 tsp Himalaya Salt

1/2 tsp Erythritol


Part 2:

70g Red tomato (medium cubed)

30g Yellow onion (diced)

20g Salted butter


Part 3:

1 tsp Garlic powder

1/2 tsp Onion powder

1/4 tsp Black pepper

1/4 tsp Himalaya Salt

1/2 tsp Erythritol

1/2 tsp Oregano (dried)

30 g Tomato paste

1/2 cup Coconut milk (UFC, unsweetened)

2/3 cup Water (filtered)


Method:

1. Mix all the dry spice ingredients stated in Part 1 “Marinade”

2. Wash both prawn, scallop and drain

3. Marinade evenly with the spice mixture, put in a cover container and keep refrigerated for 1 hour.

4. Heat up your pan, add in butter

5. Stir fry yellow onion until start to turn brown and add in tomatoes

6. Add in marinated prawn scallop mixture and stir fry until the colour of both sides changed

7. Add in coconut milk, water and stir allow to bring to boil.

8. Then, add tomato paste and make sure you stir until it all dissolved into the boiling mixture in pan

9. Add all the dry seasonings in Part 3 into the pan and stir until they are evenly cook

10. Allow the soup mixture to simmer for 3 minutes and it is ready to serve!


(Tips: Do not over cook the soup because the texture of prawns and scallops will turn rubbery)
