- Pandan Apam Balik with Durian Cream Cheese -
Wait, what?! I thought it is supposed to share something related to cheesecake?
Easy easy... as the organiser of the campaign, I have been thinking out of the box, so I would like to bring you something out of ordinary with cheese element too.

Ingredients (for yield: 20pcs)
For durian cream cheese
80g Fresh durian purée
150g Cream cheese
15g Unsalted butter
10g Erythritol (to taste based on durian)
2g Vanilla essence
For pandan apam balik
4 tsp Fresh pandan extract
4 nos Egg
100g Almond meal
50g Unsweetened coconut milk
20g Unsalted butter (melted)
10g Virgin coconut oil
40g Erythritol
1g Himalaya salt
3.5g Baking soda
It’s gonna be a “National Cheesecake Day” celebration’s recipe so I have created this special innovative cheat version of apam balik to infused cheese with local delight and something on season now...DURIAN!
Yes durian is not ketofied, but all we want is a worth treat to cheat on. Come on! We are at the peak of durian season now, so cheat a bit once in a blue moon je! (Just make sure to replenish electrolytes, exercise and eat more greens after this meal if you decided to follow my pace )
On this day, no complicated steps will be implied. Just mix everything evenly from the ingredients and use a non stick pan to bake the apam balik one by one with a standard scoop. Then pipe in the durian cream cheese filling. That’s it, voila!
Trust me, the nice natural pandan aroma from the fluffy outer layers which paired with the creaminess from the real durian flesh cream cheese has made this apam balik tasted too good!!!!
I never expect the sensory outcome of making this cheese dessert will go beyond how it looks (as shown in the picture).
