Moist Coconut Pound Cake

Cozy weather on a Sunday is meant for baking at home isn’t?



As we discussed about coconut flour yesterday, I have try to bake and come out with this recipe.


- Moist Coconut Pound Cake -


Ingredients


6 large eggs, room temperature, beaten

4 tablespoons melted coconut oil

4 tablespoons full-fat coconut milk

60 g (1/2 c) coconut flour

1/2 teaspoon sea salt

130 g Erythritol

1 teaspoon vanilla essence

1/2 teaspoon lemon zest

1/2 teaspoon baking powder

Some almond flakes for topping (optional)


Method


1. Preheat oven to 180 degree Celscius. Line the base and side pan with parchment paper.


2. To make the cake: firstly mix egg with erythritol, then followed by coconut milk and coconut oil. Then, add in coconut flour and the remaining of the ingredients, mix all together.


3. Transfer batter to the prepared pan, and bake in the middle of the oven for 35-40 minutes, or until a cocktail stick inserted into the center of the cake comes out clean.


4. Unmold the cake while warm and transfer to a serving plate. Let cool. Slice and enjoy!
