Garlic Butter Scallop
(For 1 pax serving)
Ingredients
Part 1:
100g Scallop
1/4 tsp Himalaya salt
1/4 tsp Black pepper
1/2 tsp Thyme (dried)
Part 2:
8g Salted butter (Kerrygold)
10g Garlic (sliced)
100ml Coconut milk (UFC, unsweetened)
1 tbsp Garlic powder
1/2 tbsp Onion powder
Method:
1. Marinate scallop with salt, black pepper and thyme and refrigerate for 30mins
2. Heat up your pan, melt salted butter and add in sliced garlic.
3. Add in scallop and grilled for a while in the heated garlic butter.
4. Add in coconut milk, and let it boil.
5. Season with garlic powder, onion powder and stir to mix well.
6. Turn off the flame. Garnish with some dried thyme and it is then ready to serve!
(Tips: Use unsweetened coconut milk instead of heavy cream to avoid trans fat.)
